My passions in life

  • Photography, dishes with sauce, barbecues, words, islands, water sports and being underwater
  • Copywriting, Excel (just kidding!)

If I were…

  • A dish: lechon liempo, the Filipino porchetta, for its crispy yet juicy texture, and because Filipino food is the next big thing!
  • A kitchen utensil: a wooden spoon, for gently stirring the Carnaroli rice in seafood risotto.
  • A sports item: a stand-up paddle, a kind of giant spoon made of carbon fibre, because walking on water is a small step for man but a giant leap for mankind.
  • An innovator: Navi Radjou, promoter of ‘jugaad’ innovation, because it is urgent to become ingenious again and do better with less.
  • A country: Corsica, a country unto itself, and the only place in the world where you can ski while looking out at the big blue sea (and because ‘I’ll go to sleep in Corsica’)
  • An artist: Raymond Depardon, for his perspective and his art of lingering on what no one else wants to look at (head-on)
  • A cocktail: a Mai Tai (if possible at around 35°C, with my feet in turquoise water)
  • A song: ‘Heroes’ by David Bowie, because ‘We can be heroes, just for one day’
  • An item I would take to a desert island: a set of flippers, mask and snorkel, to get away from it all for a while

My motto

« A mind is like a parachute. It doesn’t work if it is not open. »
Frank Zappa

My Proustian madeleine

A piece of bread dipped in the cooking juices of a veal chop (right in the pan, in bed, with my grandfather, on Saturday mornings, around 10 a.m.)
